Onion and Potato Frittata

  1. Preheat your oven to 180°C
  2. In a large oven-safe frying pan, heat the oil
  3. Sliced onions and potatoes and add to the skillet. Cook until the onions are translucent and the potatoes are tender, about 10-15 minutes. Stiring occasionally
  4. Mince and add the garlic and cook for another 2 minutes
  5. In a bowl, whisk together the eggs, milk, salt, and black pepper
  6. Pour the egg mixture over the onions and potatoes in the skillet. Stir gently to combine
  7. Cook for about 5 minutes, until the edges start to set
  8. Transfer the oven-safe frying pan to the preheated oven and bake for 10-15 minutes, or until the frittata is fully set and golden on top
  9. Remove from the oven and let it cool slightly before slicing and serving
